Tenemos que remontarnos a los a\u00f1os 50, m\u00e1s exactamente a 1954 para encontrar el origen de <em>El Refugio<\/em>. Una bonita historia de la que fueron protagonistas los abuelos de Claudio Hall Van Beuren. Sus descendientes, despu\u00e9s, generaci\u00f3n tras generaci\u00f3n, han ido cuidando meticulosamente su herencia para transformar <em>El Refugio<\/em> en lo que ahora es, uno de los m\u00e1s destacados lugares de la gastronom\u00eda mexicana.<\/p>\n<p>Bien conocida es de todos la gastronom\u00eda del pa\u00eds azteca. Sin embargo, Claudio nos se\u00f1ala que existen muchos estereotipos respecto a ella. &#8220;La comida va m\u00e1s all\u00e1 de los burritos. Al ser un territorio muy amplio, existen diversas recetas&#8221; pero algunos de los ingredientes son comunes: la manteca para cocinar, el jitomate y el chile son los que destacan.<\/p>\n<p>El secreto al que Hall Van Beuren apunta para el \u00e9xito de <em>El Refugio<\/em>\u00a0es el de usar las t\u00e9cnicas tradicionales e ingredientes frescos. Pero la comida tiene que ir acompa\u00f1ada siempre del amor y la atenci\u00f3n al detalle. Todo en su conjunto hace que podamos degustar all\u00ed, por ejemplo, las mejores alb\u00f3ndigas en salsa de chile chipotle.<\/p>\n<p>Una buena oportunidad m\u00e1s de profundizar en la colorida cultura de este pa\u00eds, con unas tradiciones siempre sorprendentes.
